Sushi doughnuts

These fun morsels are perfect for lunch, dinner or party snacks.

The latest hipster food to take over Instagram are sushi doughnuts – and they are easy to make. They are perfect for weeknight meals. Make your rice the night before, or in the morning, and chill in the fridge until needed.

Sushi rice

1 ¾ cup sushi rice
3 tablespoons rice vinegar
2 ½ tablespoons sugar
2 teaspoons sea salt

Wash rice thoroughly in cold water. Place in a large saucepan, add 2 cups water and cover with lid. Bring to the boil, then lower heat and simmer, covered, for 10 minutes, or until the water has been absorbed. Do not lift the lid. Remove from the heat, keeping the lid in place, and let sit for 10-15 minutes.

Mix the rice vinegar, sugar and salt in a small bowl until dissolved. Add to rice. Allow to cool, then chill the rice in the fridge until ready to use.

Making up

Press rice into a lightly oiled silicone doughnut mould (you need one that’s flexible) so that the rice comes halfway up the mould. Sprinkle over sesame seeds and wasabi paste (optional), then top with more rice and press firmly. Chill in the freezer for 5 minutes.

Gently push out the rice doughnuts and place them on top of squares of nori seaweed. Decorate with sliced avocado, cucumber, smoked salmon, sesame seeds, etc.

Serve with pickled ginger, extra wasabi paste and Japanese soy sauce.
