These tasty treats make a great starter or fancy nibbles at dinner parties and barbecues.
Spinach & smoked salmon rolls
Ingredients:
2 eggs
200g fresh chopped spinach
Salt and pepper
100g cream cheese/soft herb cheese
Capers
200g smoked salmon
To make:
1. Preheat oven to 210 degrees C (410 degrees F). Line a roasting pan with baking paper.
2. In medium bowl, lightly beat eggs. Add spinach, salt and pepper and mix well.
3. Pour egg and spinach mixture into lined pan. Use a spatular to spread mix out into a thin square shape. Bake for 20 minutes. Remove from oven and allow to cool.
4. When cool, take out of pan, flip over onto work surface and remove baking paper.
5. Spread cream cheese/herb cheese over spinach. Sprinkle a few capers on top, then place smoked salmon over cream cheese.
6. Roll up square, cover with cling film, and place in the fridge for a couple of hours before slicing and serving.
