Orange liqueur baked salmon

orange baked salmonThis sensational salmon dish is easy to make and packed with flavour.

This dish works well baked in the oven or grilled on the barbecue. The orange liqueur loses much of its alcohol content during baking, so there is no need to worry that you are sending your guests home tipsy. Serve it with a simple green salad.

Orange liqueur baked salmon

Ingredients:
4 fillets of salmon
Rock salt and pepper
1 tablespoon olive oil
100g (3½ oz) butter
¼ cup orange flavoured liqueur
Juice of 2 oranges
8 slices of thinly sliced oranges
1 teaspoon of fresh thyme

To Make:
1. Preheat oven to 200 degrees C (400 degrees F).
2. Line an ovenproof baking dish with baking paper to prevent the fish from sticking to the pan.
3. Season each fillet of salmon with salt and pepper and heat olive oil in frypan.
4. Quickly sear both sides of the salmon to seal in the flavour, remove immediately and place in your prepared baking dish.
4. In a small saucepan, heat the butter, orange liqueur and orange juice, and allow to simmer for a few minutes until slightly reduced and thickened.
5. Place orange slices on top of salmon fillets and poor over the orange liqueur mixture, dividing the mixture equally between all 4 pieces. Sprinkle with fresh thyme and bake in the oven for 15-20 minutes or until the salmon is cooked through.
