Animals, flowers, stars – these chocolate cookies can be cut into any shape. They are perfect for themed parties and holiday celebrations.
Mint chocolate cookies
1 cup flour
3 tablespoons cocoa powder
Pinch salt
120g (1 stick) butter, softened
¼ cup sugar
1 teaspoon mint extract
1 large egg
Filling
½ cup cream
200g (7 oz) white chocolate, roughly chopped
1 teaspoon mint extract
- Sift the flour, cocoa powder and salt into a mixing bowl.
- Using an electric beater, cream the butter and sugar in another bowl. Add the mint extract and egg and beat until combined.
- Add the dry ingredients and mix to form a dough. Roll into a ball, cover with plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 180 deg C (350 deg F) and grease 2 oven trays. Working on a floured benchtop, roll dough out to a thickness of 3mm (1/8th inch). Use a cookie cutter to cut out shapes. Transfer cookies to oven trays and bake for 6-8 minutes, or until the dough starts to turn golden at the edges. Allow to cool completely before filling.
- To make the filling, pour cream into a saucepan and bring to the boil over a low heat. Remove from the heat and add the white chocolate, stirring until melted. Add the mint extract and stir. Allow mix to cool until firm but not set. Use a spatula to ice half the cookies, then pop the remaining cookies on top to form a sandwich.
