Make your own apricot and mint lamb burgers for the barbecue or grill.
These burgers are so much more tastier than what you can buy in the shops. If you wish, you can double the mix and freeze half the patties once you’ve shaped them and before cooking them.
Makes 6 large burgers, or 10-12 smaller ones.
Ingredients
1 tablespoon olive oil
1 medium onion, finely chopped
1/4 teaspoon cinnamon
400g minced lamb
1 medium-sized zucchini, grated
5 dried apricots, finely chopped
10-12 mint leaves, finely chopped
1 teaspoon runny honey
salt and freshly ground pepper
1. Heat oil in frypan on medium heat, add onion and cook for 2 minutes, or until soft. Add cinnamon and cook for another 2 minutes.
2. Transfer to a large mixing bowl and add the lamb, grated zucchini, dried apricots, mint leaves, honey and seasoning. Mix well, then shape into 6 large burgers or 10-12 smaller ones.
3. Fry in frypan or grill on the barbecue, about 5 minutes each side, or until cooked through. Serve with salad, humus, with flatbread or sandwiched between hamburger buns.
