Gluten free Anzac cookiesAnzac biscuits are a true Kiwi favourite, and they’re super quick to make, from start to finish. But what if you cannot tolerate gluten, or you have coeliac disease? Emma Galloway from My Darling Lemon Thyme has the solution. The Kiwi blogger (she’s living in Australia at the moment) swapped out oats from the traditional recipe for quinoa flakes and came up with these tasty alternatives. “These biscuits are pretty damn close to the original in both flavour and texture,” she says. “Gloriously crisp and golden on the outside, while still chewy in the centre.” Click through to her website to get the recipe.
