Filo parcels make great little starters to main meals, and add that ‘wow’ factor. They are easy to make too. We have two different filo parcels to share with you, one with Camembert and honey, the other with goat cheese and cranberry sauce. Either serve these tasty morsels for lunch accompanied by a green salad, or dish them up at your next festive party.
Camembert and honey filo parcel
Ingredients:
4 sheets filo pastry
125g (1 round wheel) Camembert cheese
4 teaspoons honey
Fresh sprig of thyme
¼ cup walnut pieces
50g (1.7oz) butter, melted
To make:
1. Preheat oven to 200 degrees C (400 degrees F).
2. Cut each sheet of filo into quarters.
3. Cut Camembert into quarters.
4. Brush a piece of filo with melted butter, layer this with 3 more sheets of pastry. Each piece should be placed at right angles and brushed with the melted butter. End result should look like a star or the spokes of a wheel. Make 4 of these.
5. Place a piece of Camembert in the centre of each pastry stack.
6. Mix honey and thyme leaves together and place a teaspoon of the mixture on top of the Camembert.
7. Crush walnut pieces and place some on top of the honey and thyme.
8. Gently gather filo pieces up around the cheese and scrunch together so they hold in place. Be careful not to pull the pastry too tight.
9. Brush all over with melted butter. Make 3 more parcels.
10. Place parcels on well greased oven tray and bake for 10-15 minutes or until just golden. Do not overcook or the cheese will melt through the pastry.
11. Serve immediately with fresh green salad.
Goat cheese and cranberry filo parcel
Ingredients:
4 sheets filo pastry
125g (1 round wheel) goat cheese, aka chevre
4 teaspoons cranberry sauce
50g (1.7oz) butter, melted
To make:
1. Preheat oven to 200 degrees C (400 degrees F)
2. Cut each sheet of filo into quarters.
3. Cut goat cheese into quarters.
4. Brush a piece of filo with melted butter, layer this with 3 more sheets of pastry. Each piece should be placed at right angles and brushed with the melted butter. End result should look like a star or the spokes of a wheel. Make 4 of these.
5. Place a piece of goat cheese in the centre of each pastry stack.
6. Put a heaped teaspoon of cranberry sauce on top of cheese.
7. Gently gather filo pieces up around the cheese and scrunch them together so they hold in place. Be careful not to pull the pastry too tight.
8. Brush all over with melted butter. Make 3 more parcels.
9. Place parcels on well greased oven tray and bake for 10-15 minutes or until just golden.
10. Serve while still warm.
