If you already have the ingredients in your fridge or freezer, you can whip up these small pies in minutes. If not, consider stocking up on these few ingredients to have on hand when visitors unexpectedly drop by.
Ingredients
Ready-made shortcrust pastry
Brie (can also use feta or a cheese of your choice)
Oven-dried tomatoes (click here to make your own)
Black olives
Thyme or oregano
Method
1. Preheat oven to 215 deg C (425 deg F).
2. Roll pastry out to about 3mm (1/8th inch) thick. Cut into strips 15-20cm (6-8 inches) long. Leave enough pastry for the base of the pies.
2. Place a piece of cheese in the middle of the pastry strip, followed by an oven-dried tomato, sliced olives, another piece of cheese, and a sprig of thyme or oregano. Roll up the pastry, pinching the ends together.
3. Using a round cookie cutter, cut small circles from the remaining pastry for the base. Place the pies on top of the circles and pinch the edges together.
3. Bake for approx. 15 minutes, or until the pastry is golden.
