Easter’s just around the corner so we thought some Easter cupcakes were in order. These cupcakes are so very easy to make. Just choose your favourite cupcake mix, then whip up some chocolate icing and pipe it onto your mini cakes in swirls. Decorate each one with a miniature candy Easter egg and three small cake candle holders. It’s really that simple!

You can use any cupcake recipe, but we quite like this recipe:
Orange Cupcakes
115g butter, softened
1 cup caster sugar
2 large eggs, yolks and whites separated
1 teaspoon vanilla extract
1 ¾ cups flour
½ teaspoons salt
2 ½ teaspoons baking powder
½ cup orange juice
Preheat oven to 180degC.
Cream butter and sugar in food processor.
Add egg yolks and vanilla, and mix until combined. Transfer to a mixing bowl.
In another bowl, mix flour, salt and baking powder together. Add to creamed mixture, a third portion at a time, alternating with the orange juice.
Beat egg whites until soft peaks form, then fold into cake mix. Pour mixture into cupcake liners until half full.
Bake for 15 minutes or until a skewer inserted into the cupcakes comes out clean.
