Here’s a fun treat for the kids. They can even make it themselves.

Pancakes are super easy to make, and relatively healthy. You can play around with your mix by adding cocoa powder, using wholemeal flour, or perhaps even coconut flour. But you’ll need to add more liquid if using coconut flour.

Blueberry Chocolate Chip Pancakes

2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
2 ¼ cups milk
60g (2 oz) butter, melted
2 eggs
1 cup frozen blueberries, defrosted (retain juice)
¾ cup chocolate chips
Vegetable oil
Maple syrup (optional)
Sliced banana and fresh (or extra frozen) blueberries, for serving

Sift flour, baking powder and salt together. Add milk, melted butter and eggs and mix to form a batter. Mix in blueberries with juice, and chocolate chips.

Heat oil in frying pan, ladle spoonfuls of batter into the pan and cook until browned. Turn and cook the other side.

Serve with maple syrup and fresh fruit.
