Raw cashew creamWant a healthy topping for your desserts? Fi Jamieson-Folland whips up a delicious cream with nutritious ingredients.

Given the choice, would you pick a healthy dessert over a decadent one? Especially if it tastes really good? This all-natural cream goes with any sweet treat – and it’s also good for you. It’s a great source of nutrients, including iron, phosphorus, magnesium, zinc and manganese, plus protein and the right kinds of fats.

Crème Dream

Please note that you need a high-speed blender to perfect your crème.

  • 1 cup raw cashews (pre-soaked for 3 hours minimum, and then drained)
  • 1-2 tablespoons agave, or to taste
  • ½ teaspoon natural vanilla extract – or more to taste
  • 1 pinch celtic sea salt
  • ½ – ¼ cup filtered water – according to thickness you like most

Place all the ingredients in a high-speed blender. For the water, begin with ¼ cup and slowly add more to thin out the cream gradually, so that it’s exactly how you like it.

Use the purée mode if you have one, and blend until it reaches a creamy consistency.

Storing tip
Keep in a BPA-free, airtight container in either the fridge or, if you’ve made more than you need, the freezer.

Top tips for the perfect Crème Dream

  • Experiment with different flavours, eg. sprinkling with raw bee pollen, raw cacao nibs, fresh blue berries, or soaked raisins before serving.
  • Include organic and go with the raw options where you can – they often have more nutrients.
  • You’re find raw cashews in health food stores or pick-and-mix selections. Always purchase from a store where there’s a high turnover to make sure they’re fresh. You want even-coloured nuts that smell sweet, rather than those that have a bitter smell (this can be a sign that they’re rancid.) Store your cashews in a BPA-free container or glass jar in the fridge for up to six months. Pre-soaking the cashews remove the factors that stop the enzymes in your nuts from working properly, and this also helps make them more digestible.
