Chocolate raspberry cookies

Double Chocolate and Raspberry Cookies 

{Gluten-free}

MAKES 24
125g butter
1 cup brown sugar
1 egg
¾ cup tapioca flour
½ cup rice flour
1 teaspoon gluten-free baking powder
¼ cup cocoa
30g freeze-dried raspberries, crushed
100g white chocolate chips

Preheat the oven to 180°C. Line two baking trays with baking paper.

Soften the butter and place in a bowl with the brown sugar and the egg. Using electric beaters, beat together until light and creamy.

Stir in the sifted flours, baking powder and cocoa, then add the raspberries and white chocolate chips. Mix until well combined, ensuring there are no lumps of flour in the mixture.

Use a spoon to place heaped mounds onto the prepared trays. Leave about 5cm between each cookie to allow for spreading.

Bake for about 15 minutes, until the edges are beginning to turn a darker brown. This can be difficult to judge, but you will see a distinct dark rim appear around the edge.

Allow to cool on the tray.

Store in an airtight container.

    I would really like to give this to my wife – she loves to bake but is finding it a little hard at the moment because so many visitors that pop round are gluten intolerant. I know she would find this book incredibly helpful. Oh and my best baking tip – stay out of the kitchen…..I always tend to ruin anything I touch 😉

  10. I love baking but with a couple of friends and family members now going gluten free I never know what to bake.The gluten flours are so expensive to buy so I like the above recipe that just tells you which flours to use instead
