Chicken lime kebabs

Stuck for a quick and easy dinner idea? Try our chilli and lime chicken kebabs. After marinating, they take a mere 10-15 minutes to cook.

The great thing about this recipe is that you can make it ahead of time. Ideally the chicken should be marinated for at least 1 hour – just long enough for you to go head to the gym, walk the dog, attend the kids’ sports training or after school activity… or for taking time out to work on your craft project. Or you can marinate them in the morning before you head off to work.

When you’re ready, boil some rice, cook the kebabs, and dinner is ready.

Chilli and lime chicken kebabs

Ingredients:

2 large boneless, skinless chicken breasts (to make 10 kebabs)
2 cloves garlic, finely chopped
2 tablespoons lime juice
1 teaspoon lime zest
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon olive oil
1 red chilli, chopped and deseeded (or to taste)
2 teaspoons finely chopped coriander (cilantro)
Extra coriander for garnishing
Jasmine rice to accompany
10 metal skewers (or bamboo skewers soaked in water for half an hour)

To make:

1. Cut chicken into bite size pieces and place in a bowl or a ziplock bag.

2. Combine all other ingredients and pour over chicken pieces. Mix through, ensuring chicken pieces are coated with marinade. Leave to stand for at least 1 hour. If using bamboo skewers, you may wish to soak them in water at this stage.

3. Push chicken pieces onto skewers and either grill (broil) in the oven, or cook on the barbecue. Serve with rice or salad and garnish with coriander (cilantro).
