Sausage & Butternut Squash Pasta
We used boerewors sausages for this dish simply because they were on special at the time. You can use any sausage but ideally use one with lots of spices or seasoning for flavour. The boerewors sausages were perfect. The spices in the sausages means you do not need to add other spices when cooking. If using plain sausages, add seasoning to the pan. We also used fresh herbs from the garden, which cost us nothing. You can use any herbs you have on hand to add flavour to this dish.

4 boerewors sausages
Oil for frying
500g butternut squash, peeled and cut into cubes
1 onion
350g dried fettuccine
Parsley or other herbs from the garden
1. Remove skins from the sausages and cut into chunks.
2. Heat oil in frypan and cook sausage, butternut squash and onion until cooked, about 10 minutes.
3. Meanwhile, cook pasta as per packet’s instructions.
4. When sausage mix and pasta is cooked, toss fettuccine into frypan, together with herbs, and mix.
