These healthy bars are perfect for breakfasts on the go, lunchbox snacks, or mid-afternoon treats.

Ingredients
2 cups oats
¼ cup raisins
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons pumpkin pie spice*
1 cup pumpkin purée
1 large egg
2 teaspoons vanilla extract
1 ½ cups milk
½ cup maple syrup
2 tablespoons melted butter
2 tablespoons pumpkin seeds
1. Preheat oven to 190 deg C (375 deg F). Grease a 20cm x 20cm (8 x 8 inch) pan and set aside.
2. Combine oats, raisins, baking powder, salt and pumpkin pie spice and pour into prepared pan.
3. In a separate bowl, beat pumpkin purée, egg, vanilla, milk, maple syrup and melted butter for 2-3 minutes until smooth. Mix in pumpkin seeds. Pour pumpkin mixture over oat mixture.
4. Bake for 35-45 minutes. Can be served warm or cold.

I made these today. I followed the recipe exactly and they turned out terrible! There’s too much liquid, so the bars don’t form nearly as firm as the picture states. And the taste isn’t that good either. Stick with pumpkin bread if you’re craving the fall flavor…
